Slovenian Potica

We recently took a trip to Lake Bled, and loved exploring the area and trying Slovenian food.  Lake Bled was full of natural beauty, and is a really hidden gem of a destination.  While we were there, we enjoyed trying the local specialities, including potica, a sweet, rolled bread that can be filled with a variety of fillings.  We enjoyed this pastry so much that we want o try to recreate it. Ingredients

  • 2 packets (14 grams) yeast
  • 1 cup milk
  • ¾ cup butter plus more for brushing over the top
  • ⅓ cup granulated sugar
  • 1 teaspoon salt
  • 2 eggs
  • 4 cups flour
  • 500 grams walnuts
  • ½ cup brown sugar
  • Powdered sugar for serving

Method

Make the dough

  • Add 2 packages of yeast to ¼ cup warm water, let sit for 10 minutes until very bubble
  • Warm one cup of milk on the stove and then let it cool to be warm, but not too hot, it should feel warm to the touch but not burning
  • Melt ¼ cup of butter
  • Add the butter and ½ cup granulated sugar and 1 teaspoon salt to the warm milk  
  • Add 2 eggs to the mixture
  • Add the bubbly yeast to the milk mixture
  • Add 4 cups of flour, one at a time
  • Knead until it is a smooth ball 
  • Place in a greased bowl and set aside for 1-2 hours, until doubled in size
  • After it has risen, punch it down and let it rise for another 10 minutes
  • Preheat oven to 350 degrees fahrenheit of 175 degrees celsius

Prepare the filling

  • Chop the walnuts
  • Melt 1/2 cup of butter
  • Combine the butter, walnuts, and 1 cup brown sugar in a bowl with cinnamon and vanilla if you have it

Fill and Roll the Potica

  • Roll out the dough and cover it with the filling
  • Roll up from the edges them roll in a circle
  • Melt about 2 more tbsp butter and brush it over the top
  • Bake for 35-40 minutes, until golden brown
  • Top with powdered sugar and enjoy
